Here is a simple, healthy, high protein breakfast idea. You can make it with whatever Ingredients are calling to you.....

spinach and onion

red pepper and olives

bacon and jalapeño

Directions:

Beat 3 eggs in a bowl

Chop whatever mixin ingredients you are using and place in a mini muffin tin

Pour 1-2tbs of eggs in each cup over your ingredients

Top with salt and pepper

Add any cheese you like

Put in a  350°F oven for 15 min  or until golden brown on top
