The go to side dish in my house is brussel sprouts. If you shudder at the thought of eating brussel sprouts, you are probably remembering your childhood plate with brussel sprouts boiled to death! Give them another try. Seriously.  When cooked properly they are absolutely delicious with a nutty sweet flavor. Brussel sprouts are high in potassium, fiber, vitamin B6, vitamin C, vitamin K and magnesium. 

 Ingredients:

brussel sprouts trimmed and halved

2 tbsp olive oil

salt and pepper

Directions: 

Heat a cast iron skillet or heavy bottom pan to medium low heat and add the olive oil. Add salt and pepper to the olive oil once it's heated. I eyeball this as everyone likes different seasoning. If you are unsure, less is better! You can add more later if needed. Place the brussel sprouts cut side down in the pan.

Let them cook slowly. It usually takes about 20 minutes. They are done when the bottoms are crispy golden brown and you can easily pierce them with a fork. They will also turn dark green.  That's it!!! Serve as a side dish to anything. I pair them with grilled chicken for a delicious, healthy dinner.
