I made this veggie spaghetti and sauce with my new Veggetti!! If you don't know what a Veggetti is, check it out here.
This recipe is really easy to make and the sauce can summer all day in the crockpot while you are at work.
1 package sliced Baby Bella mushrooms
2 cans diced tomatoes
1 sliced onion
1.5lb Italian sausage
2 tbsp onion powder
2 tbsp garlic powder
1 jar marinara
Brown the sausage then cut into 1" slices. Mix the mushrooms, tomatoes, onions, sausage, garlic powder and onion powder in the crockpot. Turn the crockpot to low and let it cook for 6-8 hrs. Skim off the fat and liquid then add 1 jar marinara and let cook for another 30 min.
Slice zucchini in the Veggetti. I used 1 zucchini per person. Add to boiling salted water and boil for 2-3 min.
Drain the zucchini and plate it with the sauce. Add Parmesan cheese as desired.
